Your wish is a bit unusual - at least in my eyes. Normally with flap you want to support certain flight phases as themal or speed - so the flap go a little bit up or down (normally not more than max +/- 5 mm). This very often is done by fixed values and the related switch for the flight phase - but if you wish you can put it on the left roller. In my eyes this means a lot of fumbling around not really seeing what position you are in. For finding the right setting in testflights this might b ok. But how often do you change the setting afterwards?
By far the most important funkction is spoiler controling butterfly. The gas stick is usually taken for the spoiler function as you might steer the butterfly function most carefully and sensitvely.
